My Quick and Easy Chicken ‘n Prawn Fried Rice Meal
Ingredients
- 4 chicken thighs
- 200g prawns or shrimp
- 2 cups Left over rice
- Onion or shallots
- 4 cloves of garlic
- 1/2 a cup frozen peas
- 1/2 a cup frozen sweet corn
- 2 medium sized carrots
- Mushroom
- 2T/spoons Olive oil
- 2T/spoons soy sauce
- Salt and pepper
Method:
- Add olive oil to a wok or deep pan
- Add crushed or chopped garlic and chopped onions
- Sauté these for 2 minutes or until soft and golden brown
- Add mushroom, peas and sweet corn
- Fry for a minute or so then
- Set aside
- Add your diced chicken
- Brown the chicken
- Add salt and pepper
- Then add rice, soy sauce and the veggie mix
- Mix everything together until the rice is fully covered and no longer looks white
- Add shrimps or prawns on top
- cover for 2 minutes
- Serve and enjoy with your family
