My  Quick and Easy Chicken ‘n Prawn Fried Rice Meal

Ingredients

  • 4 chicken thighs
  • 200g prawns or shrimp
  • 2 cups Left over rice
  • Onion or shallots
  • 4 cloves of garlic
  • 1/2 a cup frozen peas
  • 1/2 a cup frozen sweet corn
  • 2 medium sized carrots
  • Mushroom
  • 2T/spoons Olive oil
  • 2T/spoons soy sauce
  • Salt and pepper

Method:

  1. Add olive oil to a wok or deep pan
  2. Add crushed or chopped garlic and chopped onions
  3. Sauté these for 2 minutes or until soft and golden brown
  4. Add mushroom, peas and sweet corn
  5. Fry for a minute or so then
  6. Set aside
  7. Add your diced chicken
  8. Brown the chicken
  9. Add salt and pepper
  10. Then add rice, soy sauce and the veggie mix
  11. Mix everything together until the rice is fully covered and no longer looks white
  12. Add shrimps or prawns on top
  13. cover for 2 minutes
  14. Serve and enjoy with your family
